Matū Kai to Open Spring 2025 in Brentwood

Building off the Success of Matū, Matū Kai Will Explore New Ways to Express the Essence of the Best Beef on Earth — 100% Grass-Fed Wagyu From First Light Farms

The team behind Matū is excited to announce  Matū Kai, a new restaurant at 11777 San Vicente Boulevard in the Brentwood neighborhood of Los Angeles.

We are very excited about the opening of Matū Kai in Brentwood,” said co-founder Jerry A. Greenberg. “Kai is, in many ways, Matū’s twin — they share the same DNA — yet just like twins, they are not exactly the same. At Matū we have been exploring cooking techniques from around the world that complement our core steak offerings and make up our Matū dinners. The addition of Kai gives us more room to push that creativity while keeping our menu focused at each restaurant."

With extraordinary beef as the starting point, Matū Kai will serve up new dishes like ribeye ragu with hand-torn pasta, brochettes with harissa spice, and a tenderloin satay with crying tiger sauce. Not to be outdone, Matū in Beverly Hills is adding two non-meat options, a grilled octopus and a twice-baked potato with Kaluga caviar.

Like Matū, Kai will exclusively serve 100% grass-fed Wagyu from First Light Farms. For over five years, Greenberg has been an owner in First Light since discovering the beef when opening HiHo Cheeseburger. He has recently become a direct owner in Ngaruru, one of the farms in the First Light Farms collective that is further refining the craft of raising highly marbled beef that is 100% grass-fed.

This ownership from ground & grass to fork & knife delivers on a fundamental promise of Matū and Matū Kai: TRUST.  Guests can trust the provenance of every single piece of beef; trust they will feel good after eating; trust that the animals were humanely raised; and trust the regenerative farming practices used in New Zealand are helping the earth. 

"First Light Farms stands out for its taste and how it makes you feel. It doesn't need dry aging, marinades, or sauces to be delicious,” co-founder Scott Linder explains. “Our beef has a depth and complexity of flavor that only comes from living on open pastures and eating a variety of what nature has to offer.  It’s worlds apart from beef that was only fed corn. Plus, Wagyu adds its own unique flavor. That’s why our beef only requires salt, pepper, and heat—just the way it should be."

Designed by architect Robert Tsurimoto Kirsten of A-RTK, the former bank space has been completely transformed using elements like solid walnut as well as bronze, blackened steel, and brick finishes. The tree-lined dining room fully opens to the patio while the kitchen offers an open view through large glass windows. The restaurant will also feature a private dining room and a bronze-clad bar with lounge seating.

In Māori (indigenous New Zealand), Matū means the essence of, the gist of the matter, or richness, while Kai means to eat or to devour. 

Matū Kai will take reservations for the dining room, accommodate walk-ins and operate on a first-come, first-served basis for the bar. Cheesesteaks by Matū will be served at the bar and available to-go at lunch time.
